- 10 grams flaxseed/linseed
- 60 grams water
- 55 grams Medjool Dates - Pitted, Approximately 3 dates
- 3 Bananas (preferably overripe), Approximately 260-330 g
Dry dough ingredients
- 275 grams wholemeal flour, 2 cups
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon (ground)
- 1-2 tablespoon sesame seeds, optional

1) Grind linseeds up, speed 9, 20 secs
2) Put ground linseeds in a bowl and add 60 grams of water to the bowl. Leave aside
3) Put 3 bananas into mixing bowl and mash on speed 5, 5 seconds. Put the mashed bananas into the same bowl as linseeds (save washing an extra bowl)
4) Put dates into mixing bowl and chop Speed 9, 10 seconds.
5) Add all the dry ingredients to the mixing bowl (except sesame seeds) and mix speed 5, 10 seconds.
6) Add wet ingredients (soaked linseeds and mashed bananas) into bowl. Mix speed 6, 10 seconds.
Dough will look hard, dont add in more water.
Put into your pregreased loaf pan and scatter optional sesame seeds on top. Bake for 50-60 mins at 180 degrees till it's well-risen, crusty and golden on the outside. A wooden skewer inserted right into centre should come out clean

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Made this today as had a few overripe bananas to use up. Didn't have wholemeal flour so used bakers flour instead. Still turned out okay.
