Mud Cake

  • 300 grams white chocolate melts
  • 200 grams soft butter
  • 250 grams Milk
  • 130 grams white sugar
  • 2 teaspoon vanilla extract
  • 2 eggs
  • 100 grams Self Raising Flour
  • 180 grams plain flour

Recipe's preparation

  1. Preheat oven to 170 degrees.

     

    Put white chocolate melts, butter, milk and sugar into TM bowl and cook for 5 minutes, 80 degrees, speed 1.

     

    While that is cooking, beat eggs and vanilla extract together in a small bowl.

     

    Once chocolate mixture is finished, add in egg mixture and flours and mix  for 20 seconds on speed 4 then increase to speed 5 for a further 5 seconds to make sure it is mixed well.

     

    This mix doesn't rise too much as it is mud cake so you can fill patty cases almost to the top.

     

    Bake for 20 minutes  and test with a skewer before removing t make sure they are cooked properly. Times may vary with different ovens.

    These are amazing. Absolutely delicious. Think I overfilled them a touch after following the instructions to fill them nearly to the top! Next time I'll do 2/3 full instead of 3/4 full. Yummmm!

    These cupcakes are just devine. I used the Aldi White chocolate coconut and that was so yummy and delicious topped with buttercream frosting and oreo cookies. My brother inlaw just loved these cupcakes! definitely doing these again.

    Wow, these are fantastic! Delicious and so so easy to make. The recipe made 20 full size cupcakes, I filled the patty pans with batter until about 7/8 full and they were the perfect height.

    Wow. .. these are great and delicious too!  I got 24 mini cupcakes and 11 regular cupcakes out of the mix!   The minis took14mins and they look amazing.   A lovely round top perfect for dipping in chocolate and sprinkles like the ones from Woolies for the little people.   I added some raspberries and a square of white chocolate to the regular ones for the big people.   Figure they would make a great dessert straight from the freezer
