Ingredients
cake
- 180g unsalted butter softened
- 55g Dark Brown Sugar
- 6 firm red plums
- 295g caster sugar
- 2tsp vanilla
- 4 eggs
- 225g Gluten free plain flour
- 1 1/2tsp Gluten Free Baking Powder
- 25g cocoa
- 90g ground almonds, grind in thermomix

Pre heat oven to 150
grind almonds for 5-10secs speed 9 then add flour,baking powder,cocoa and mix 5secs speed 5 ,set aside
Grease sides and base of 22cm springform pan,line base with baking paper ,melt 20g of the butter .then .using a pastrybrush brush over lined base and scatter brown sugar,then
cut plums in half then place the plums.cutside dowm over base leaving a 1cm border.red plums are nice i bought red but they were yellow inside !
beat caster sugar and vanilla for 3mins/speed4,scrape down add eggs one at atime through lid beating for couple seconds each egg on speed3
add flour mix and mix 5-10 secs speed 4 check its mixed through i found it quite thick ,i used spatula to stir through then pour over plums spreading out and smooth surface.bang tin couple times to remove airpockets
cook on oven tray for approx 1hour or till skewer comes out clean
cool in pan for 15mins then invert onto plate

Tip
This was a very rich cafe style cake,i was in doctors and read it in masterchef magazine not sure how old ! took picture with my iphone.now it has lot sugar im sure you could reduce easily but was a delicious rich cake.in magazine they used red plums which looked lovely
