Recipe's preparation

    Mirepoix
  1. Add onion in halves, carrot (2/3 cms), and celery.
    Chop 3 secs speed 5
    add 20 grams olive oil
    Saute Time 3 mins, temp 120, speed 1
  2. Stock
  3. Insert blade cover (if using)
    Add chicken carcass ( broken up)
    Add water
    Add bay leaf
    50min, 98 deg, speed stir, reverse
    Drain with the simmering basket into jug and discard bones

For Beef broth use bouquet garni with thyme and orange peel
