Ingredients

sauce

  • 1 bunch herbs, eg parsley, basil, oregano
  • 4 cloves garlic
  • 2 carrots, roughly chopped
  • 800 grams chopped tomatoes, fresh or tinned
  • 200 grams water
  • 200 grams red wine
  • 100 grams olive oil
  • 50 grams tomato paste
  • 2 heaped tablespoons sugar raw
  • 2 heaped teaspoons sea salt
  • 1 tablespoon TM vegie stock concentrate
  • 2 teaspoon black pepper
  • 1/2 zucchini, roughly chopped
  • 1/2 red capsicum, roughly chopped
  • 2 brown onions, cut in half

Recipe's preparation

  1. Step 1: Place garlic, onions, carrots, zucchini, capsicum and herbs into TM bowl and pulverise for 45 seconds on speed 8. (best to place herbs on the bottor or middle so they are chopped and not just pushed around the top).

    Step 2: Scrape down sides of bowl and add oil

    Step 3: Saute for 5 mins varoma speed 1-2 MC off

    Step 4: Add all other ingredients and cook for 30 mins varoma speed soft. (Remove MC and place basket on top of lid whilst cooking)

    Step 5: Blitz for 45 seconds speed 8 (increase gradually - MC must be on for this step).

    Step 6: Pour into sterilised jars and if required for longer storage, a water bath is recommended.

     

Tip

You can add more or less of any of the veggies (I like mine full of veg) just ensure the bowl doesn't exceed the 2L mark at the end.

Your sauce should be more of an orange/red instead of bright red colour (like the store bought pasta sauce) given there are no preservatives or additives.

    Absolutely delicious! So good with the hidden veg. Only thing I found is that 2 teaspoons of pepper is too much. My 1yo couldn't eat it for that reason. Even for the adults it's too peppery. Next time I would use 1/2 - 1 tsp instead. Thanks for a great recipe!

    FANtAsTIC!!

    i have often gone to the original recipe and being a health conscious mum of 2 young kids adding as many veggies into a meal has been my priority .. so glad I found this, it’s literally the healthier and tastier version of the original, well done!

    Made it it to the letter (minus wine as I’m pregnant and had no wine in the house🤷‍♀️ Oh and changed to powdered white pepper as my girls will find any spec of bulk pepper!) and it was great .. I have just bought all the ingredients to make double double batches and freeze for when bubs comes along .. and suggest to other people who may peel carrots, veggie skins is king, so leave the carrot skins on! love the sauce, it’s flavourful, orange and well seasoned I thought, but easy to amp up while you cook if you need to after

    love it, 100 veggies in a pasta sauce, yes please!
