Ingredients
Mongolian healthy bansh / dumplings
- 5 grams fresh ginger
- 1 cloves garlic
- 100 grams spring onions
- 50 grams broccoli
- 100 grams carrot
- 300 grams Beef mince
- 1 tbsp soy sauce
- 1 to taste salt
- 1 to taste black pepper, freshly ground
- 1 tbsp olive oil
Dough
- 100 grams frozen spinach leaves
- 200 grams water
- 500 grams plain flour

- Spinach dumplings
Place spinach into mixing bowl and chop 7 sec/speed 7.
Place flour and water into mixing bowl, then "Dough mode" 2 min.
If dough seems dry, add water and knead a further 1 min/. Tip dough out and shape into a ball. Cover with cling film and leave to rest for 15 minutes. Meanwhile, prepare filling. - Filling
Place ginger and garlic in mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.
Add spring onions, carrot, broccoli and chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
Add beef mince, olive oil, soy sauce, salt and pepper then mix 8 sec/speed 4"Gentle stir setting" . - Divide dough into 40 small balls (approx. 10 g) and cover with cling film or a damp tea towel to prevent them drying out. On a lightly-floured work surface, roll each ball into a thin disc (Ø approx. 10 cm).
Place 1 tsp reserved filling in the centre of each and fold the wrapper in half over the filling to make a semi-circle shape. Pinch the seam in the centre and hold it with one hand while using the other hand to pleat the top edge of the wrapper from the middle outwards on both sides. Place each dumpling on a slice of carrot and arrange in Varoma dish and tray so they are not touching.
Place water in mixing bowl. Place covered Varoma into position and steam 15 min/Varoma/speed 1. Remove Varoma and serve dumplings hot with reserved sauce.
