Recipe's preparation

  1. Add room temperature butter to TM bowl. If using unsalted butter add salt to taste.

    With MC in lid mix until smooth, approximately 15 seconds / speed 4.

    Add oil to TM bowl followed by water and mix until emulsified for approximately 1 minute / speed 4 gradually increasing to speed 6.

    When butter is fully emulsified pour it into fridge/freezer safe containers and place into the fridge or freezer to set.

Tip

Select your oil carefully because olive oil is not suited to this recipe due to the strong flavour, but a nut oil like macadamia or a tasteless oil like grape seed is perfect.

    laura_loves_thermomix:yes, it freezes really well. It lasts for a good month in the fridge but we always finish it before it goes bad.

    noni_g: thanks for your lovely comment. The water, butter and oil emulsify together perfectly to create a spreadable butter similar to commercial ones. It's amazing how many items, that we purchase from the supermarket, have water as an ingredient like almond milk and reconstituted orange juice etc. Once the spreadable butter is imulsified and sets in the fridge, you wouldn't know that it contains water and definitely will not make your sandwiches soggy.

    This is ingenious! I never thought to make my own but why am I spending so much and using so many plastic tubs???

    Can I ask about the purpose of the water? I'd be scared of soggy sandwiches.
