Ingredients

Jo’s Easy Butter Chicken:

  • 300 g brown onion, cut into halves
  • 30 g garlic paste, or 6 fat cloves
  • 30 g ginger paste, or 3 cm fresh ginger
  • 1 long red chilli, deseeded and halved, Optional
  • 100 g ghee or butter
  • 2 to 3 tbsp Butter Chicken Spice
  • 150 g Raw Cashew Nuts, or almonds
  • 400 g Tomatoes, tinned or fresh
  • 100 g tomato paste
  • 50 g lemon juice, or juice of 1 lemon
  • 2 level tsp salt
  • 1 tbsp sugar or honey
  • 1400 g Chicken thighs cut in half, boneless & skinless
  • 200 g Yoghurt or Coconut cream

Rice:

  • 700 g Cauliflower Rice, OR
  • 400 g jasmine or basmati rice
  • 580 g water
  • 20 g oil
  • 1 tsp salt

Butter Chicken Spice Blend:

  • 3 tsp garam masala
  • 2 tsp ground paprika
  • 1/2 tsp ½ tsp ground cinnamon
  • 1 tsp ground cardamom
  • 2 tsp ground cumin
  • 2 tsp ground turmeric
  • 2 tsp Ground Coriander

Recipe's preparation

    Butter Chicken:
  1. Add onion, garlic & ginger (plus optional chilli) then chop for 5 seconds / speed 5.
  2. Add ghee or coconut oil & spice blend, then sauté 5 minutes / Varoma temp /reverse Counter-clockwise operation"Counter-clockwise operation" speed 1.
  3. Add nuts to TM bowl with tomatoes, tomatoe paste, sugar, lemon juice & salt then blend for 1 minute / speed 8.
  4. Add chicken pieces to TM bowl, and place cauliflower rice in varoma onto lid, then cook for 25 minutes / Varoma temp / reverse Counter-clockwise operation"Counter-clockwise operation" speed soft Gentle stir setting"Gentle stir setting" or until chicken is cooked through.
  5. Add butter chicken from TM bowl to thermoserver with yoghurt or coconut cream then stir together to combine.
  6. Serve with either cauliflower rice or jasmine rice and naan bread.
  7. Optional - Cauliflower Rice:
  8. Place 350 g of the cauliflower into the TM bowl & chop for 5 seconds / reverse Counter-clockwise operation"Counter-clockwise operation" / speed 5.

    Repeat with remaining 350 g cauliflower.

    Clean and dry mixing bowl.

    Transfer into Varoma dish and set aside until step 5 when butter chicken is cooking, then place on top of TM bowl/lid.
  9. Optional - Jasmine Rice:
  10. Place rice, water, oil and salt into mixing bowl, stir with spatula, then start Rice Cooker mode, placing simmering basket instead of measuring cup onto mixing bowl lid.

    Transfer rice into a thermal serving bowl or other large bowl, then gently fluff with a fork to separate grains if needed.

    Serve as desired.
  11. Butter Chicken Spice Blend
  12. Add all of the listed spices to the TM bowl and blend on speed 9 for 1 minute.

Tip

* The chicken thighs don't need to be diced up into small pieces.
In fact, larger pieces give a much better final result, because you don't want the chicken shredded, which is what happens when they are cut up too small. Therefore, simply cut the thighs into halves or third's depending on how large the thighs are.

* For a spicier butter chicken add some fresh chilli in step 1.

* Serve garnished with fresh coriander and a side of cooked rice and naan bread.

* Make a large batch of the Butter Chicken Spice Blend to save time in the future.

*Butter chicken sauce can be doubled and half frozen for a 2nd meal. Just add chicken and yoghurt or coconut cream for a quick, easy and delicious ‘fake-away’.
