Ingredients

Jo’s Easy Butter Chicken:

  • 300 g brown onion, cut into halves
  • 1 tbsp garlic paste, or 6 fat cloves
  • 1 tbsp ginger paste, or 3 cm fresh ginger
  • 80 g ghee or butter
  • 2 tbsp Butter Chicken Spice Blend
  • 150 g Raw Cashew Nuts, or almonds
  • 400 g Tomatoes, tinned or fresh
  • 40 g tomato paste
  • 1400 gram Chicken thighs cut in half, boneless & skinless
  • 2 level tsp salt
  • 50 g lemon juice, or juice of 1 lemon
  • 180 g Yoghurt or Coconut cream
  • 1 tbsp sugar

Rice:

  • 700 g Cauliflower Rice, OR
  • 400 g jasmine or basmati rice
  • 580 g water
  • 20 g oil
  • 1 tsp salt

Recipe's preparation

    Butter Chicken:
  1. Add onion, garlic & ginger then chop for 4 seconds / speed 7.

  2. Add ghee or butter & spice blend, then sauté 5 minutes / Varoma temp /reverse Counter-clockwise operation"Counter-clockwise operation" speed 1.

  3. Add nuts to TM bowl with tomatoes, tomatoe paste, sugar & salt then blend for 1 minute / speed 8.

  4. Add chicken pieces to TM bowl, and place cauliflower rice in varoma onto lid, then cook for 20 minutes / Varoma temp / reverse Counter-clockwise operation"Counter-clockwise operation" speed soft Gentle stir setting"Gentle stir setting" .

    Stir the chicken with spatula to ensure even cooking, then further cook for 5 mins / Varoma temp / reverse Counter-clockwise operation"Counter-clockwise operation" speed softGentle stir setting"Gentle stir setting" or until chicken is cooked through.

  5. Add lemon juice & yoghurt (coconut) or sour cream, to 2.6 litre thermoserver then mix together.

  6. Add butter chicken from TM bowl to thermoserver with lemon juice & yoghurt/sour cream then stir together to combine.

  7. Serve with cauliflower rice or jasmine rice.

  8. Optional - Cauliflower Rice:
  9. Place 350 g of the cauliflower into the TM bowl & chop for 5 seconds / reverse Counter-clockwise operation"Counter-clockwise operation" / speed 5.

    Repeat with remaining 350 g cauliflower.

    Clean and dry mixing bowl.

    Transfer into Varoma dish and set aside until step 5 when butter chicken is cooking, then place on top of TM bowl/lid.

  10. Optional - Jasmine Rice:
  11. Place rice, water, oil and salt into mixing bowl, stir with spatula, then start Rice Cooker mode, placing simmering basket instead of measuring cup onto mixing bowl lid.

    Transfer rice into a thermal serving bowl or other large bowl, then gently fluff with a fork to separate grains if needed.

    Serve as desired.

Tip

* The chicken thighs don't need to be diced up into small pieces.
In fact, larger pieces give a much better final result, because you don't want the chicken shredded, which is what happens when they are cut up too small. Therefore, simply cut the thighs into halves or third's depending on how large the thighs are.

* For a spicier butter chicken add some fresh chillies in step 1.

*Serve garnished with fresh coriander and a side of cooked rice or naan bread.
