  • 145 g milk powder
  • 135 g cream
  • 90 g sugar, optional
  • 25 g Vanilla Paste, optional
  • 170 g yoghurt

Recipe's preparation

  1. Add milk to bowl
  2. 15 mins @ 90°C, Speed 3 (Skip if using UHT milk)
  3. Cool to 45°C (Skip if using UHT milk)
    If starting at this step, select Kettle mode & heat to 45 degrees.
  4. Add milk powder and cream and if desired, sugar and vanilla
  5. 3 minutes, 45°C, Speed 3 (extend if it hasn't reached 45°C)
  6. Add yoghurt
  7. 2 minutes, 45°C, Speed 3
  8. Select Fermentation Mode (8Hrs, 45°C)
    This can be increased to 12 hrs. Increasing the fermentation time, reduces the lactose (sugars) and produces a thicker, creamier, slightly more tart yoghurt.

Tip

I do recommend adding the sugar as it assists with the fermentation process. Vanilla is completely optional and can even be added afterwards. You can also increase to milk powder to 180g. Cream can be reduced or omitted for a lower fat version.

Set aside 180g of yoghurt once made to start your next batch!

Use UHT milk for the shortest preparation time. Aldi sells Organic UHT Milk.


I use Jalna Greek Pot Set Youghurt as my starter and tend to only use the youghurt I made once or twice before using a Jalna starter again. It's really important to use yoghurts which have no additives or your end result may turn out gritty in texture.

Make sure your bowl and all utensils are extremely clean before starting. Slimy yoghurt is caused by bacteria.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
