Ingredients

Pulp from making 1 batch of almond milk

  • 1 cup almond pulp
  • 1/2 cup mashed ripe banana
  • 6 tablespoons Peanut Butter
  • 1/4 cup flax meal
  • 2 teaspoons vanilla
  • 2 teaspoons cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup dried cranberries / raisins
  • 1/3 cup walnuts
  • 1/4 cup psyllium (optional)
  • 1/4 cup wheat germ (optional)

Recipe's preparation

  1. 1. Preheat your oven to 300 degree oven.

    2. Line a pan with parchment paper.

    3. Add pulp, banana, peanut butter, flax, vanilla, cinnamon and salt into the Thermomix. 2 minutes, speed 10.

    4. Add cranberries or raisins, walnuts and pumpkin seeds. Reverse blades to mix 1 minute, speed 6. Add the psyllium and wheat germ if it looks too wet.

    5. Spread the mixture evenly and bake for 35 minutes.

    6. Cut 4-5 slices, turn over and continue baking for another 15-20 minutes till desired doneness.

     

    Optional seeds or dried fruit may be added. Taste the dough and add maple syrup if preference is for sweeter.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
