- 450 g Red apple (cored & quartered), Fuji or other sweet variety
- 2 teaspoon Baking Powder, see EDC
- 1/4 teaspoon sea salt
- 3 free range organic eggs
- 60 g olive oil, or Butter (see EDC) or choice of Macademia Nut oil or Coconut Oil
- 1/2 teaspoon cinnamon
- 1 teaspoon Vanilla Bean Paste, or extract
- 260 g wholemeal spelt flour

Preheat oven to 180C or 350 F.
Grease and line loaf tin (approx 10 x 25cm) with baking paper.
Grate apple- put apple pieces into TM bowl. Grate 5 secs/ speed 5.
Scrape down sides of bowl.
Add- remainder of ingredients and combine "Counter-clockwise operation" / 15 secs/ speed 4.
Scrape down side of TM bowl.
If required combine another "Counter-clockwise operation" 5-10 secs/ speed 4.
Using spatula, scoop mixture into prepared loaf tin.
You can choose to bake as is, or garnish with thinly sliced apples and a little cinnamon or coconut sugar.
Walnuts sprinkled over the top also create a nice finish.
Bake for 1 hour or until skewer comes out clean.
Times can vary, check after 45 mins, and cover with foil if necessary to prevent drying out.
Remove from oven and Allow to cool in tin for 1 hour.
Remove from tin and serve.
Left over can be kept in sealed container.
Serve as is, or add almond butter or ricotta or any other spread you wish!
Tip
This recipe is virtuallly sugar free! The sweetness comes form the apples.
Chopped Walnuts could be added in the final mixing stage.

So I modified this a little bit to make it slightly less healthy :/
I added a generous squeeze of honey & a dash of milk. I also only had 2 apples to added 2 pears as well.
i also blended it for about 15 seconds longer and cranked it to 8-9 because I didn't want it as lumpy.
otherwise it was delicious!
This went down a treat. I made a double batch and have frozen for school lunches.
Very yummy! I sliced the loaf & froze individual pieces to use for lunches.
