Ingredients

Bread

  • 125 g unsalted butter, room temperature
  • 250 g caster sugar
  • 2 eggs
  • 300 g sour cream
  • 4-5 bananas, Very Ripe
  • 260 g plain flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons bicarbonate of soda

    Bread
  1. Prepare a loaf tin with baking paper.

     

    1 - Add butter and sugar on the TM bowl, mix 30sec / speed 5 to form a cream.

     

    2 - Add in the egg, sour cream and banana, mix 10sec/ speed 5.

     

    3 - Add in the flour, bicarb and baking powder, mix 10sec / speed 5.

     

    4 - Sit the mixture in the prepared loaf tin for 2 hours.  

     

    5 - Bake it on a 150C pre-heated oven for approximated 50-60 minutes.

     

Tip

You may add 50-100gr of Walnut after step 3, then mix for 15sec / Counter-clockwise operation"Counter-clockwise operation" / speed 2.

    Help.... I made this and although my skewer came out clean showing that it was cooked, when I cut a slice, it was still not cooked at the bottom. Can anyone tell me what I did wrong?

    I halved the sugar, added choc chips and walnuts and it was so delicious. I only let it sit for an hour and it still turned out moist and light. My favourite banana cake recipe by far.

    Awesome recipe, I used gluten free flour and added a tsp of xanthuim gum (spelling) and next time I will put less sugar. tasted so nice and moist and the family loved it.
