Ingredients

Cheese and onion loaf

  • 1 onion, peeled and halved
  • 45 grams Butter
  • 450 grams bakers flour
  • 2 teaspoons Yeast, dry
  • 1 teaspoon dry mustard powder
  • 175 grams Grated Tasty Cheese
  • 150 grams Milk
  • 150 grams water
  • salt and pepper to taste

Recipe's preparation

  1. Place onion in bowl and chop 3 seconds, Speed 7.

    Scrape down sides of bowl.

    Add 25g butter and cook 3 min, Varoma, Speed 1.

    Set aside to cool completely, wash bowl thoroughly.

     

    Place water and milk in bowl, heat 1 min 30 seconds, 37 degrees, Speed 1.

    Add into bowl flour, yeast, mustard, salt, pepper, cooled onion and 125g grated cheese.

    Mix to combine 5 seconds, speed 6, thenDough mode"Dough mode" for 3 min.

     

    Remove dough from bowl, wrap in thermomat and set aside in a warm place for 1 hour to prove.

     

    Knock back dough (punch down) and knead gently (use floured hands if needed as this dough can be quite sticky)

     

    Lightly grease a 25 x 10cm loaf pan.

     

    Divide dough into 20 equal portions and shape into small rounds.

     

    Melt remaining butter.

     

    Place half the small rounds in loaf pan to fill, brush with some of the melted butter. Top with the remaining rounds of dough and brush with the remaining melted butter.

     

    Cover with varoma dish upside down to form a lid and then cover with teatowel and then place in warm spot to rise 45-60 min, or until dough reaches top of tin.

    After 30 min preheat oven to 180 degrees.

     

    Sprinkle the remaining cheese over the top.

     

    Bake in oven 40-45 min or until risen and golden brown.

     

    Leave to cool in pan 5 min before turning out onto cooling rack.

     

Tip

Oven must be preheated or else loaf with collapse in middle.

Dough is quite sticky from the onions.

Delicious served both warm or cold.

    Thanks for your feedback! Yes, to get 20 rounds they are tiny, but looks good for preasentation tho!! Next time i bake this i will do as a loaf and see if it still looks as good as a one piece loaf!

    I have just taken this out of the oven and it smells divine! I didn't quite get 20 rounds but it turned out amazing none the less. Thank you for sharing, it's a winner  tmrc_emoticons.)
