Ingredients

Mixed vegetable au gratin.

  • 1 piece cauliflower head (small), cut into pieces
  • 1 piece Brocoli head (small), cut into pieces
  • small pieces of other assorted vegies for colour, (i used red and orange capsicum, zuchini, green beans and sweet potato), enough to fill the chosen casserole dish
  • 3-4 slices bread, or 1 cup breadcrumbs made in TMX
  • 125 grams cream
  • 400 grams Milk
  • 60 grams flour
  • 50 grams butter, diced
  • 100 grams tasty cheese, cubed
  • 500 grams water, for steaming

Recipe's preparation

    Mixed vegetable au gratin
  1. Describe the preparation steps of your recipe

  2. Preheat oven to 180c.

    Grease large rectangle baking dish.

     

    Grate 60g of the cheese 10 sec, speed 8, MC in place. Set aside. No need to wash TM bowl.

    Place bread and the remaining 40g cheese in bowl and grate 5-10 sec, speed 6, MC in place. Set aside. No need to wash TM bowl.

    Add 500g water to the TM bowl, put hard vegetable pieces in Varoma, set in place and cook on Varoma temp, 20 minutes, speed 2 (i put in softer vegies half way thru this cook time, esp zucchini!!)

    Once vegetables are tender, set Varoma aside with vegetables still inside and lid on to keep warm (I put on top of thermoserver so that it stays warm while sauce cooks)

    Empty water out of TM bowl and give it a quick rinse and light dry, no need to be too thorough with cleaning and drying of inside bowl at this point.

    Add milk, cream, flour and butter to the TM bowl, cook 7min, 90degrees, speed 4.

    Add in pre grated cheese and cook a further 1min, 90degrees, speed 4.

    Place cooked vegetables into prepared baking dish, pour cheese sauce evenly over the top, and then top with the cheese and breacrumb mixture.

    Bake in preheated oven for approx 20 minutes, or until sauce is bubbling and topping is golden brown.

     

     

Tip

Any fresh seasonal vegetables of your choice can be used, the vegetables in recipe just used as a guide.

I use light cheese and light milk to make this a healthier option.

    Yum 4/5 of family loved it the only 1 who didn’t is super fussy 😬 enough leftovers for lunches the next day

    This recipe was awesome!! I added some spring onions and mixed italian herbs before pouring sauce over the top.

    Delicious! Makes heaps - plenty of leftovers for another 2 meals.

    I used Brocolli, Cauliflower, Corn, Carrots, Capsicum, Zucchini. I added some YIAH - Country Onion and chives Dip Mix and Mousska Spice Blend to the cheesy sauce. YUMMO. 

    The breadcrumbs I used some I had made prior - stored in the freezer (mix of multigrain bread, YIAH Mediterranean Dukkah, Parmasen Cheese and Cheddar Cheese).

    Will definatley be making this again. So many flavour options to try with my YIAH products.

    Yum yum yum!!!!!! Kids loved it as did i and my husband. Used up things in the vegie drawer put some parsnips, carrots and recommended  veg!

    I packed mine full of veggies like squash, pumpkin, zucchini, runner beans etc. made a fantastic side dish that lasted through 2 dinners and 2 lunches for 3 of us  Big Smile
