Ingredients

  • 30 g white sugar, plus 2 tsp extra for coating ramekins
  • 70 g dark chocolate chips
  • 250 g smooth ricotta cheese, drained
  • 3 eggs
  • ¼ tsp ground cinnamon
  • 80 g pouring (whipping) cream, plus extra whipped cream to serve
  • fresh blueberries, to serve

Recipe's preparation

  1. Preheat oven to 160°C. Liberally grease 4 ramekins (6–8 cm) with butter. Place ½ tsp white sugar into each ramekin and rotate to coat the edges. Discard any excess sugar. Place ramekins onto a baking tray (30 x 40 cm) and set aside.

  2. Place chocolate into mixing bowl and melt 3–4 min/50°C/speed 1, or until fully melted. Scrape down sides of mixing bowl with spatula then around the base of the blades to ensure no chocolate is caught.

  3. Add sugar, ricotta, eggs, cinnamon and cream and heat 3 min/50°C/speed 3.

  4. Divide chocolate mixture between ramekins and bake for 30–35 minutes (160°C) or until a wooden skewer inserted into the centre comes out clean. Allow to stand for 5 minutes before carefully turning out of the ramekins onto serving plates.

  5. Serve topped with blueberries and whipped cream.

Tip

Transfer any leftovers into an airtight container and store in the refrigerator to enjoy the next day.

    My kids did not like this. I think it needs more chocolate as it tastes too eggy. I followed the recipe exactly. I used large eggs as this is what I always buy. Maybe you need small eggs but then does it set?

    The butterfly symbol is shown incase you choose to whip cream for serving. It is not actually required for the recipe. Please refer to The Basic Cookbook or Everyday Cookbook for whipping cream instructions.

    A great recipe which is similar to a cheesecake but with out the crumbed base...I served them with whipped cream and strawberries on the top. Winner winner chicken dinner...LOL tmrc_emoticons.)

    Is the butterfly to whip the cream to serve or is it inserted at step 3?
