- 2 Large Ripe Bananas, roughly chopped
- 1/4 cup firmly packed brown sugar
- 2 tbsp Butter
- 1 1/2 cans of coconut cream

Combine brown sugar, salt and butter in pan and on a medium/hot temperature heat until bubbling. Add chopped bananas and cook for 3-5 minutes or until slightly burnt and caramelized*.
Turn down heat to low and add coconut cream and stir until combined.
Add coconut mixture to TM and puree for 5 seconds, speed 9.
Pour coconut cream mixture into ice cube trays and freeze.
Add frozen coconut mixture to TM bowl and process for 1min 30 seconds on speed 9 using your spatula.
* I prefer my bananas caramelized, however follow this method for Thermomix only recipe.
Add brown sugar, salt, butter and chopped bananas to TM bowl and cook 100C, 5 minutes, speed 1. Add coconut cream to TM bowl and puree for 5 seconds, speed 9. Pour coconut cream mixture into ice cube trays and freeze. Add frozen coconut mixture to TM bowl and process for 1min 30 seconds on speed 9 using your spatula.

Must be made the day before.

CAG69:Thank you for your comment/tips... Does this recipe miss ingredients too? Other than salt + the quantities for the salt, and coconut cream... is something missing from the 'coconut cream mixture??? Or is that just frozen coconut cream?!
This turned out lovely, but I tweaked it a bit to suit my husband's special dietary requirements. Was unsure of how much salt to use, but guessed used 2 tsp. Also cooked for a bit longer.
Ditto for above question re salt?
