Ingredients

Fruit Base

  • 2 pieces green apple peeled and quartered, chopped to bite size pieces
  • 3 pieces Red apple peeled, cored and quartered, chopped to bite size pieces
  • 4 pieces Nectarines, destoned and c
  • 4 pieces peaches with seed removed and cut into chuncks
  • 1 tablespoon Sweetener of choice, (sugar, rapadura, agave etc)
  • 1 teaspoon vanilla, (paste or extract)
  • portion Butter, greasing of baking dish

Crumble Mix

  • 100 grams unsalted butter
  • 75 grams Nuts of choice
  • 75 grams Oats,rolled
  • 50 grams golden flax seeds
  • 50 grams Shredded coconut
  • 50 grams crystalised ginger
  • 40 grams Sweetener of choice, adjust to taste
  • 2 teaspoon vanilla, extract or paste
  • 1 teaspoon cinnamon, if desired
  • 1 pinch sea-salt flakes

Recipe's preparation

    Fruit Base
  1. Preheat oven to 180deg (170deg fan forced)

    Peel and chop apples into bite sized pieces and add to liberally buttered baking dish.

    Chop stoned fruits and mix with apples.

    Sprinkle sugar and vanilla over fruits

    Place baking dish in oven to caramelise fruits for 20mins.

  2. Crumble Mix
  3. I like a chunky crumble mix so I add all ingredients into Thermomix Sp6 6sec

    If you prefer a finer mix then add the Nuts, Oats, Ginger and Flax Sp7 6 sec then add the other ingredients Sp6 6 sec

    Sprinkle crumble onto caramelised fruit, turn oven down to 170deg (160deg Fan Forced) for 30mins

    I served ours with Vanilla Icecream, but goes perfectly with Custard also.

     

Tip

I use all of the leftover Christmas fruits for this crumble so mix and match up to 1kilo of fruit

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
