  • 1 tablespoon arrowroot powder
  • 150 grams Rice malt syrup, Or 1/2 cup of sweetener of your choice

Recipe's preparation

    Coconut Vanilla Ice Cream (Vegan & Soy Free)
  1. 1. Place 150grams of rice malt syrup (or 1/2 a cup of sweetener of your choice) and 710grams of coconut cream in the bowl (I used three 270g cans of Ayum Coconut cream- give them a good shake before opening) 5mins/speed1/80degrees

    2. With the remaining 100g of coconut cream whisk through the arrowroot powder to make sure its smooth. While thermomix is still going gently pour this in. 3. Thicken mixture by cooking 90degrees/speed1/8-10minutes 

    4. Add Vanilla bean paste and mix speed 3/10seconds 

    5. Pour into a container and freeze for 5 hours or overnight. 

    6. Scoop frozen coconut concoction into TM Bowl. Lick the spoon and get excited. Blend 1minute/speed 9 then mix 10 seconds/speed 4. 7. Pour back into container and refreeze for 5 hours (or more).

    Good recipe.

    Really easy to make and it tastes delicious.

    I used a plant-based condensed milk as the sweetener. next time I think I will try it with sugar as the sweetener.

    I found it to be quite icy and hard to scoop out even after leaving it for a little bit to defrost.
    We put it back in the thermi and gave it a blitz to whip it up again and that made it creamier/scoopable.

    This was super tasty and easy to make. I flavoured mine with peppermint essence and choc chips.

    The only issue i find is it isn't as "scoopable" as store bought ice creams, so i just left it out for 10 min to make it easier.

    So simple and tasty! Best bit is now my 3 yr old son can enjoy vanilla ice cream without suffering a sore belly after - we found the preservatives in some of the store bought & even coco whip upset him.

    I made this a couple of nights ago and it was delicious! Will make again for a dairy free ice cream treat to enjoy at night. I used the butterfly from step 1 and mixed on speed 2 in step 2.

    ice cream is light and fluffy, would also be a great addition to a rich cake with berries. Might try that next time! Yummy!
