Ingredients

Ice-Cream

  • 70 grams white sugar
  • 2 egg yolks
  • 300ml fullthickened cream Or low-fat thickened cream
  • 250ml full cream milk
  • 1tsp Vanilla Paste
  • Pinch salt

Recipe's preparation

    Method
  1. Place sugar into mixing bowl and mill 2sec/sp9

     

  2. Add all remaining ingredients and cook 6min/80c/sp4

     

  3. Pour mixture into a container and cover. Place in freezer overnight (I often make this one after kids go to bed)

     

  4. Remove from freezer and scoop into mixing bowl and blend 20sec/sp9, then 10sec/sp4.

     

  5. Place into an airtight container and return to freezer, will be ready by dinner time.

     

  6. Variations
  7. Chcolate ice cream: melt 50g Chco chip (I use Cacao chip) at 3min/50C/sp4 before blending the icecream in the morning (second mixing)

    Timtam ice cream: Add 100g timtam (about 5 biscuit), chop 3sec/sp5 before blending the icecream in the morning (second mixing)

Tip

Leave the ice cream container out for five minutes for easy scooping before serving.

    First icecream recipe I've ever made and the family loves it! I have been making my own since the start of the year since huubby is using egg whites for his protein shakes and I can't stand waisting those beautiful yolks so icecream is plentiful now lol!! I double the recipe and either do half vanilla and the other one Tim Tams, such a hit, Thanks for the recipe.Smile

    Made this today used marvellous creation bars from the kids xmas stockings! It will be interesting to see how it tastes tonight! I know the kids are looking forward to it the next one i make i will try pepperment crisps or crunchies. Great recipe thanks a bunch Smile

    This was delicious, thanks so much for a great recipe tmrc_emoticons.) I also found mine to be a little icey, but next time I'll try to cool it faster and put glad wrap over the top. Additionally, I'll make a double batch next time! This will be one of our regulars and I love that you can change it up by adding different things tmrc_emoticons.)

    If you cool your custard quickly will reduce the icy taste,. You can put the custard bowl straight in a ice bath and stiring it, then cover with glad wrap, push the glad wrap down just above the cuatard (this reduce the steam forming while cooling), then straight into the freezer.

    Whenever doubling a recipe, increase cooking time by 20%

    And when halving a recipe, reduce cooking time by 20%

    I made this yesterday and finished off today but the ice-cream is a bit icy.  Did I do something wrong?  Also, by Vanilla Paste, do you mean Vanilla Bean Paste?
