Crème Brûlée
- 400 grams pouring (whipping) cream
- 70 grams raw sugar
- 1 level tsp Vanilla Bean Paste
- 5 eggs, room temperature
- caster sugar, for caramelisation on top to serve

- Place 400g cream, 70g sugar, 1 tsp vanilla bean paste, 5 eggs at room temp into mixing bowl. Mix for 1 min speed 2.5
- Place on lid and insert MC. Cook for 24 min, 85 deg, speed 2.5. Crème should thicken while cooking.
- Divide crème mixture between 6 ramekins. Then allow to cool to room temp, before placing in the fridge to cool.
- Once chilled dust the top of each Crème Brûlée with a thick layer of sugar, then caramelise by heating with a kitchen blowtorch until golden brown and crisp. Serve immediately.
