Curramulka Christmas Pudding

  • 115 g Butter, 2cm cubes, soft
  • 115 g sugar
  • 2 eggs
  • 115 g plain flour
  • 120 g breadcrumbs
  • .5 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • 115 g raisons
  • 115 g currants
  • 115 g sultanas
  • 30 g almonds, chopped
  • 30 g brandy
  • 1 pinch salt

Recipe's preparation

  1. Add butter and sugar to the bowl. Mix 1 minute/ speed 4 until creamed. Scrape down halfway through if needed.

    With blades spinning (30 secs/speed 4) add eggs one at a time to jug until well combined.

    Add remaining ingredients. Mix 10 secs/Counter-clockwise operation"Counter-clockwise operation" / speed 4. Use spatula to help stir, scrape down sides and mix again if needed.

    Prepare pudding dish by greasing and flouring or a calico cloth by soaking in boiling water, wringing out excess water and dusting with flour in the top side.

    Pour mixture into dish or cloth (pull up cloth and tie with string).

    If eating same day as making, use the pudding dish. It can be cooked in the Varoma® for 6 x 90 mins Varoma® temp Speed 2 (yes 8 hours total) Make sure to keep an eye on water levels. Start with 2 Ltrs of water and top up everytime with boiling water from kettle when you restart.

    If planning ahead and making in November, I'd suggest the cloth method. The pudding will need to be steamed for 6 hours (4 x 90 mins) on the day you make it then can hang to dry in the pantry. Then steam a further 2 hours on the day you want to serve. Can use the Varoma® as above or a stock pot with a side plate upside down to sit the pudding on then steam with enough water in the bottom of the pot as to not touch the pudding, making sure to check water level regularly.

Tip

This pudding will keep for several months, I hang mine from a hook in my pantry after cooking for 6 hours prior to the last 2 hours on Christmas day.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
