Ingredients

Terri's Sweet Potato and Coconut Soup

  • 1000 g Sweet Potatoes, Peeled, diced into 2cm cubes (I roast for extra flavour)
  • 2 cloves garlic
  • 1 red onion, Peeled & quartered
  • 10 g ginger paste, (can use piece of fresh)
  • 20 g olive oil
  • 1 tsp ground cumin
  • 1 tsp Ground Coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp garam masala
  • 1000 g water
  • 2 tbsp chicken stock paste, (or Veg Stock Paste)
  • 400 g coconut milk

Recipe's preparation

  1. Place garlic, ginger and onion in the bowl, Chop 3 sec/ Speed 7
    Add olive oil and spices, Cook 3 min/120 deg/ Speed 1
    Add sweet potatoes,Chop 5 sec/ Speed 6
    Add water and stock paste, Cook 20 min/ 100 deg/ speed 2
    In TM6, 45 sec / Blend Mode (TM5 or 31, 45 sec/ speed 5 to 9 gently)
    Add coconut milk, 15 sec/ Blend Mode (TM5 or 31 15 sec/ speed 5 - 9 gently)

    Serve with crusty bread.

Tip

I find roasting the sweet potato adds extra flavour to the soup. I drizzle a little extra olive oil over the diced potatoes and roast either in the Air fryer or oven for 15-20 mins before adding to the recipe. I'm also sure the sweet potato could be subbed with pumpkin for something different too.
