Ingredients
- 200 g pitted dates
- 250 g water
- 90 g raw sugar
- 100 g Butter or Margarine
- 75 g Glace or crystallised ginger
- 1 egg
- 80 g self-raising flour
- 80 g buckwheat flour, Optional, substitue with SR Flour or wholemeal flour.
- 5 Weetbix
- 1 tsp baking powder
- 1 tsp ground ginger, Optional

Mill buckwheat into flour, 20sec on Speed 9/10. Add Weetbix, SR flour, baking powder and ground ginger. Mix together for 5 seconds, Speed 5. Set aside.
Place ginger into TM bowl and press Turbo one quickly until ginger is roughly chopped. Set aside.
Place dates into TM bowl. Chop 10 seconds, Speed 6 (until roughly chopped). Add water, sugar and butter to bowl. Cook for 5 minutes, 100C, Speed 2. Allow to cool.
When cool, add ginger and egg, and mix in, 5 seconds, Speed 4. Mix in dry ingredients, 5-10 seconds, Speed 5.
Place into loaf tin lined with baking paper and bake 180C for 50-55 minutes or until cooked.
Serve with whipped cream or butter while still warm.
Tip
This loaf is quite dense. To make it lighter, omit the buckwheat and baking powder and use 160g of self-raising flour.
Mixture can also be steamed into individual date and ginger puddings using the Varoma: 3/4 fill silicon muffin pans, place in both layers of Varoma. Fill TM bowl with 1 litre of water and steam for 25 minutes, Varoma temperature, Speed 1. Serve with home-made vanilla ice-cream.

Yummy and easy just remember to allow time to let the date mixture cool. Im not a fan of ginger and I like the loaf and so does my son. I only used 1/3 the sugar and its really sweet I think you could omit it all together.
