Ingredients
- 2 tbsp olive oil
- 2 red onions, peeled and quartered
- 500 g good quality Italian sausages, casings removed
- 2 clove garlic, peeled
- 3 sprigs sprig rosemary, leaves removed
- 1/4 tsp dried chilli flakes
- 270 g Passata
- 200 g beef stock
- 400g Rigatoni pasta
- 4 tbsp flat-leaf parsley leaves
- 120 g thickened cream
- 80 g whole parmesan

Place parmesan in TM bowl and grate, 10seconds, SP 9. Set aside in serving bowl.
Add parsley (keeping a few leaves aside for garnish), rosemary leaves and chilli flakes to TM bowl and chop, 3seconds, SP 8. Set aside.
Add garlic to TM bowl, mince 3seconds, SP 8. Add onion and chop 2seconds, SP5. Scrape down sides of bowl with spatula. Add olive oil and saute for 3minutes, 100degrees, SP1. Add sausage meat and brown, 5minutes, 100degrees, SP1.
Add herbs, passata and stock. Season, and cook for 15minutes, 100degrees, REVERSE SP1.
Meanwhile, cook Rigatoni according to packet directions.
Add cream to sauce just before serving and combine, 3sec, REVERSE sp 2. Add sauce to pasta, scatter with parmesan and garnish with parsley.

This was really delicious, a nice change from mince and very quick. Definately need to use good quality sausages. I used Italian pork and they made the dish. Will definitely make this again.
I've just recieved my TM5 and decided to give this a go for tonights dinner, being the first meal i've made in my Thermomix I was a bit apprehensive, but it was amazing! I used lamb cevapchci's and added mushrooms. Next time I would probably use a little less olive oil, however it was still delicious! Will be cooking this on a regular basis!
