Ingredients
Beef & Basil Pesto Meatballs
- 20 g olive oil
- 1 egg
- 2 tbsp brown sugar
- 20 g Butter
- 1 brown onion
- 3 cloves garlic
- 1 zucchini
- 500 g lean beef mince
- 100 g breadcrumbs
- 100 g Basil Pesto
- 350 g Fettuccine
- 1 tsp dried oregano
- 420 g tomato passata
- 2 beef stock cube (for 0.5 l)
- 120 g Fresh Baby Spinach
- 60 g Parmesan cheese
- to taste salt
- to taste ground black pepper

- In a bowl add beef mince, fine breadcrumbs, salt, egg and basil pesto. Combine together and roll into balls. Place into veroma and set aside.
- In your mixing bowl add onion, garlic and zucchini. Chop 4 sec/speed 7. Add olive oil and saute 3min/120°C/speed 1.
- Add oregano, passata, brown sugar, butter and water, beef stock, salt and pepper. to the mixing bowl. Place veroma with set aside meatballs onto the mixing bowl lid. Cook 20min/veroma/speed 1.
- Cook fettuccine in a boiling saucepan of water.
- Stir Sauce and further cook 10min/veroma/speed 1. Once finished cooking stir through baby spinach and pour sauce over meatballs. Serve with pasta and garnish with parmesan cheese.
