Ingredients

Double Chocolate Sesame Seed Cake

  • 190 g Butter, Softened
  • 40 g white sesame seeds
  • 100 g blanched almonds
  • 160 g white sugar
  • 4 eggs
  • 2 tsp Vanilla Paste
  • 170 g tahini butter
  • 4 tbsp Raw Cacao
  • 40 g gluten free flour
  • 1 tsp Gluten Free Baking Powder

Ganache

  • 200 g dark chocolate chips
  • 80 g whipping cream

Recipe's preparation

    Cake
  1. Preheat over to 160C, spray round 20cm spring form tin with coconut oil
    Place sesame seeds and almonds into mixing bowl and mill 10sec/speed9 set aside and clean bowl
    Place butter and sugar into mixing bowl and mix 20sec/speed4, scrape down and repeat twice
    Mix 30sec/speed4, slowly add 4 eggs through hole in mixing bowl lid
    Add vanilla paste and tahini butter and mix 10sec/speed4
    Add gf flour, baking powder, raw cacao and reserved milled sesame seed and almond mixture and mix 5sec/speed5 twice, scraping down inbetween
    Transfer into prepared spring form tin, and bake for 30-35 minutes (160c) until firm to touch or skewer comes out clean from centre.
    Clean and dry mixing bowl
    Allow cake to cool on rack so Ganache does not melt off it!

  2. Ganache
    Place chocolate chips in mixing bowl and grate 10sec/speed8
    Add whipping cream and heat 3min/50c/speed3, or until smooth
    If cake is cool, spread Ganache, and sprinkle with some additional seasame seeds as desired, Ganache will be nice and glossy!

Tip

This cake is best enjoyed on the day of preparation, or use additional cream or icecream when serving a day or two later

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities.
