Ingredients

Frozen Key Lime and Margarita Cheesecake

Base

  • 10 Digestive biscuits
  • 6 Ginger Biscuits
  • 50 gram Butter

Filling

  • 4 Limes, Juice and Rind
  • 25 gram castor sugar, Optional
  • 395 gram condensed milk
  • 250 gram cream cheese
  • 60 gram Tequila, Adjust to taste

Recipe's preparation

  1. Grease and line a slice or cake tin (with foil or baking paper) and set aside

    Place biscuits and butter into mixing bowl and blend 20 sec/speed 5, extend [/b]until combined and mixture is moist if necessary












            1. Transfer mixture into tin and spread evenly over base, pressing down slightly to make a firm crumb base. Transfer to the freezer while you prepare the filling. Clean and dry mixing bowl















            1. Place sugar, lime peel into mixing bowl and chop 10-15 sec/speed 9. [/b]Scrape down sides of bowl and repeat, as required, until all rind is finely chopped.
























            1. Add cream cheese and condensed milk and mix 2 min/speed 4[/b], until well combined and fluffy. Scrape down sides of mixing bowl and repeat, if required.Add lime juice and Tequila gradually and blend a further 30 sec/speed 4[/b].















    Spread the cream cheese mixture evenly over the biscuit base. Return to the freezer for several hours (Overnight if possible) before serving.

    Remove from freezer about 20 minutes before serving to soften a little. Then garnish with a little lime slice and/or whipped cream if you wish and serve

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
