Biscuit Base

  • 200 grams Butter
  • 2 packages granita/marie biscuits

Filling

  • 2 cans Condensed milk 400g
  • 500 grams cream cheese
  • 300 grams thickened cream
  • 8 Lemons, juiced

Recipe's preparation

  1.  Melt butter for 2 1/2 minutes/90deg/speed 2

  2.  Add biscuits and crush 5 secs/speed 9

  3.  Press biscuit mixture into 8inch/20cm spingform tin, and place in fridge to set

  4.  Place condensed milk, cream cheese and thickened cream in clean TM bowl. Mix for 30secs/speed 6, adding lemon juice in a steady stream for the last 15 seconds

  5.  Pour mixture over prepared biscuit base and refridgerate minimum 6 hours, preferably overnight, until set. Decorate with cream and fruit of choice (eg strawberries) before serving.

Tip

Following comments on this recipe, you could always consider halving the recipe. Me, I like a tall cheesecake with lots of filling. Enjoy!

    This time-out I put in 6 myer lemons which equalled to 545g of juice. The cheesecake didn't set. Whilst it was still yummy it wasn't suitable fir a party.

    Definitely keeping this recipe with my adjustments below.

    Biscuit base I done 150gm butter and the lemons I did 4 which equalled to 300g of juice. I have a Myer Lemon tree that produces very large juicy lemons.

    I used the largest spring form pan I have which is around 35cm diameter. I put the crumb along the bottom and sides of the cake, the filling I thought might be to much but it wasn't. It was perfect!

    A definite keeper for future gatherings when my tree is blooming with lemons like it is today.

    My cheese cake is currently setting in the fridge. I used 200g of lemon which was about 5 lemons and that was the perfect amount for us.
    When I put the base mixture into my 20cm round cake tin it took up half the tin. So I spread it all the way up the sides. The cheesecake mixture didn't quite all fit in our tin but the family was happy to finish the bowl of left overs! 😂
    Delish easy recipe. Can't wait to eat it tomorrow!

    This is so yummy, it's now my families favourite dessert. I halve the base recipe as I find it too thick & goes very hard. Halving the recipe is the perfect base for us. I decorate with a few strawberries.
