  • 180g raw sugar
  • 350g Frozen Strawberries
  • 350g Frozen Oranges
  • 350g Frozen Mixed Berries
  • 3 egg whites

Recipe's preparation

    1. Place sugar in TM bowl and mill 20 sec / speed 9. Set aside. NB: You need 60g per layer (or less if you wish) - but it is easier to mill it all in one hit while you have a clean dry bowl.
    2. Place 60g of the sugar that you have just set aside in TM bowl.
    1. Add frozen strawberries (or fruit of your choice) and chop 10 sec / speed 8. Scrape down.
    2. Insert Butterfly. Add 1 egg white and mix 45 secs / speed 4 or until you have a soft consistency.
    1. Pour first layer into a cheesecake spring form tin.
    2. Flaten the mixture with the spatula.
    3. Place tin into freezer for half an hour.
    4. Repeat the same for the next two layers. (remember to place in freezer each time for approximately 30 minutes). This will just make it easier to pour the next layer on.
  1. Freeze for a few hours before required. 

    TIP:  Before you unclip the springform tin to open it - go around the edge of the tin with a knife to loosen away from the tin.

I do know of someone who has done it in a tin lined with Glad Wrap if you don't have a spring form tin.

    This turned out so well, thank you Leonie! I used half the sugar (30gm) for the fruit layers and cheated a bit using a Sara Lee Salted caramel ice cream for the middle layer and actually that was perfect. Everyone loved it. And the whole thing was delicious again the next day. Your instructions are great and I will definitely make again. Yum!

    DELISH...nothing more to say. I reduced sugar to 30g & unbelievably good.
