  • 175 g sugar
  • 3 lemon, zest
  • 175 g lemon juice
  • 4 large eggs
  • 300 g unsalted butter

Recipe's preparation

  1. Mill sugar and zest till zest is pulverised, 40s/sp10.
    Scrape down.
  2. Add lemon juice and blend 1min/sp10.
  3. Add eggs and cook 6min/80deg/sp3.
    Check that the curd coats the back of a spoon.
  4. Cool down cream till 55deg or below (when the light turns from red to green), 10-15mins/sp2.
  5. Set machine to 5min/sp6.
    With the motor running, add butter in cubes of about 30g through the hold in the lid.
  6. Once all the butter has been added, blend for another 3min/sp6.
  7. Transfer to a container and cover surface with clingwrap.
    Refrigerate for at least 4 hours to achieve the dream cream.
  8. Credit to Waisan Wong from the Malaysian Thermomix group who have now closed their website.

Tip

Use the cream to fill profiteroles or tart shells for lemon tarts, or as a spread on scones. Or anything at all you can think of. Use Meyer lemons if available for a more fragrant cream.
