Ingredients

Lime and Mango Cheesecake

  • 250 grams digestive biscuits (I use McVitie's)
  • 75 grams Butter
  • 500 grams cream cheese
  • 1 Tin condensed Milk
  • 3 Limes
  • 125 grams caster sugar
  • 2 tablespoons Gelatine powder
  • 1 teaspoon vanilla essence
  • 3 Mangos

Recipe's preparation

    Cheesecake base
  1. Place butter in thermomix and melt on 100 for 2 minutes on speed 1. Add digestive biscuits and mill for 5 seconds on speed 7. Scrape down sides with spatula and mix again for 5 seconds on speed 7. Spread biscuit base into a 24cm spring form pan and press down firmly. Smooth top with the back of a spoon. Refrigerate while you make the filling.

  2. To make filling dissolve gelatine powder in 100ml of boiling water and set aside. Add cream cheese, condensed milk, juice of 3 limes, caster sugar, vanilla essence and flesh of 2 mangos to Thermomix. Now add the dissolved gelatine. Blend for 20 seconds on speed 7. Check that mix is smooth and pour onto biscuit base. Cover with cling wrap and refrigerate for 4 hours. When ready to serve peel remaining mango and slice finely then decorate top of cheesecake in a swirling pattern.

    Love Yum, Yum, YUM!
    My gosh,, this is a definate keeper.....
    MY ALTERATIONS:
    Instead of geletine I use Jelly disolved in 3/4 cups of hot water, do this first and alow to almost set - will take about 1-2 hours room temp, less sugar - 100gm caster sugar and the base is what ever biscuits I have in my cupboard.

    I use the following to put on the top from another recipe:
    Mango Coulis
    2 mango, ripe
    30g caster sugar
    2 tablespoon lemon juice
    - add all to thermo speed 7 for 15 seconds

    A big hit!

    Left the sugar out, used extra mango for sweetness, and put fresh passion fruit on top. Hubby thought it tasted like a mango mousse. Fantastic result. Thanks.

    Beautiful tangy taste and creamy texture, I left the sugar out and used gingernut biscuits for the base, it was a good balance of flavours. Quick and simple.

    Light and full of flavour

    I used 60g of lime juice and the rind of one lime

    I left out the sugar

    Excellent recipe. I've made this twice and its always a hit. I did reduce the sugar down to 100gms as the mango's I had were large and I didn't want it to be overly sweet.  Perfect mouse-ish cheesecake.

    I made this, and it was sublime!  My limes were quite small, so I added a little extra bottled lime juice (could have used more).  I will definately make it again!    *RedDawn*
