Macadamia Butter Toffee Crunch
- 226 grams Butter
- 200 gram white sugar
- 132 gram macadamia nuts, roasted and unsalted, chopped
- 227 gram chocolate chips, semi sweet, chopped
- 7 grams corn syrup

- Line a sheet pan with wax paper
- Sprinkle ½ cup of chopped macadamia nuts on the pan, spread evenly.
- "Closed lid" Add butter, corn syrup and sugar, cover with lid and splatter guard. mix and dissolve 15 minutes/Varoma/"Counter-clockwise operation" speed 3, speed 3. make sure sugar is dissolved
- Pour the toffee mixture over the nuts on the sheet pan, spreading with a spatula as thin as possible. Immediately top with the chopped chocolate. Spread quickly with a spatula as it melts to cover the entire surface of the toffee. Top with the remaining nuts. Make sure nuts are pressed on to the chocolate.
- Chill until cool and hardened. Peel the toffee from the waxed paper, and cut or break into bite-sized pieces to serve.
Tip
i used glucose syrup instead of corn syrup.
reduce the amount of sugar if desired. glucose/corn syrup is sweet too!
prolong step 3 if sugar is not dissolved in increments of 2 minutes to ensure the toffee is not burnt.
i also used salted butter and packet of salted/roasted macadamia nuts so no need to add salt
i chilled the mixture in the fridge to hasten the chilling/hardening process
use the Mix Shop's pizza cutter for ease in cutting the toffee. So easy!
