Puddings

  • 80 g raw sugar
  • 700 g plum pudding, any sort, I used Lions
  • 250 g Dark eating chocolate
  • 125 g brandy, or liquer of your choosing
  • 200 g white chocolate melts
  • glace cherries or cranberries

Recipe's preparation

    Choc Christmas Puddings
  1. Place raw sugar in TM bowl. Grind 10 sec, speed 10. Until icing sugar. Scrape out sugar and set aside.

    Place chocolate in TM bowl. Grate 5 sec, speed 9. Scrape down sides of bowl.

    Melt chocolate 2 - 3 mins, 50 degrees, speed 3.

    Crumble in pudding. Add icing sugar, and liquer. Mix  Counter-clockwise operation"Counter-clockwise operation" 30 - 40 sec, speed 3.

    With slightly wet hands, roll tablespoons of mixture into balls, place on a tray, cover and refrigerate until firm.

    In a clean and very dry TM bowl, place white chocolate melts. Melt 2 - 3 mins, 50 degrees, speed 3 until melted.

    Drizzle white chocolate over the top of puddings to represent 'custard'. Decorate with cut cherries or cranberries.

Tip

I've used all sorts of liquer for these yummy treats. Including kahlua, rum, amaretto, and frangelico. All worked a treat. tmrc_emoticons.)

You could also use cut mint leaves and raspberry lollies. Whatever is in the pantry at the time.

    I too found the mixture to be quite moist, therefore only added half the alcohol suggested. But I did pop the mixture into the fridge overnight, and found I could easily roll the mixture into balls the next day. We enjoyed them and I'm happy to say I'd make them again.

    Mixture was really soft for me.  I would put in half the alcohol but it probably depends on how moist your pudding is.
