- 800 g Christmas Cake
- 100 g dark chocolate
- 2 tablespoons Brandy or Brandy essence
Topping
- 200 g white chocolate
- 1 bunch Diced red & green glace cherries or red & green licorice

- Blitz the christmas cake until it resembles crumbs 6 sec, speed 6.
Set aside
Melt dark chocolate and brandy 2 minutes, 50°c, speed 2.
Combine dark chocolate with the christmas cake. combine by hand or mix on reverse for 1 minute, speed 3.
roll into balls and refrigerate until required.
Melt white chocolate 2 minutes, 50°c, speed 2
Scrape down bowl at 1 minute.
Use a teaspoon to top white chocolate on top of the puddings and finish with cherries/licorice/jelly beans.

Delicious...I've made 3 batches in the last week. Obviously I have not eaten them all by myself. They went down a treat. I used a bought Christmas cake the first time. Then a friend suggested making a boiled fruit cake, cheaper and just as yum. Thank you for a new family Christmas treat.

These were very nice. I also used a cheap supermarket cake and they turned out great! I cut up red and green snakes for the decoration as they were the only "red and green" things I could find!
These little puddings are quick , simple and a winner. I used coffee and vanilla. I will be making these every Xmas
I have been making these for many years now, but l use either orange juice or some condensed milk instead of essence or alcohol that way they are perfect for children and non alcholics.

Wow these are terrific and so easy. I used a cheap supermarket cake and didnt have brandy but added sherry instead and turned out delicious. im taking them to a party tonight and I'm sure they will be a big hit thanks so much for the recipe.
