Ingredients

Cheesecake Crumb

  • 100 g Butter, (cold from fridge)
  • 300 g Chocolate Ripple Biscuits

Cheesecake Filling

  • 150 g raw sugar, (Can use caster if you already have it)
  • 200 g White Cooking Chocolate
  • 500 g Philadelphia cream cheese
  • 1 tsp Vanilla Paste
  • 320 g cream
  • 1 tbsp gelatine
  • 60 g Boiling water
  • 300 g hulled strawberries

Recipe's preparation

    Cheesecake Crumb
  1. 1. Cube butter into small chunks, place in Closed lid"Closed lid" , melt: 3m30s, 60*, Speed 1

    2. Add biscuits and blend for 5s, Speed 6.  Scrape down side of bowl and blend for another few seconds if required.

    3. Press into spring form pan (or lamington tray for slice) and refrigerate while you prepare the filling.

  2. Cheesecake Topping
  3. 4. No need to wash bowl.  If using raw sugar, blitz 7s, Speed 9, and set aside.

    5. Add broken up chocolate to bowl, melt 4m, 50*, Speed 3.

    6. Add cream cheese, sugar and vanilla paste.  Blend 20s, Speed 5.

    7. Scrape down sides, add cream and blend 15s, Speed 5.

    8.  If appears chunky at all you may wish to blend a further 3-5s, Spead 7-9 or until smooth.

    9. Dissolve 1tbsp gelatine in 60g (1/4 cup) boiling water.  Add to bowl.  blend 5s, Speed 5.

    10. Add strawberries.  Blend 15s, Speed 5.

    11. Pour over refrigerated base.  Return to fridge to set overnight.

  4. Finishing Touches

Served with "Grandma's Strawberry Sauce" (DP): //www.recipecommunity.com.au/recipes/grandmas-strawberry-sauce/61972  Next time I think I would choose to add cornflour to thicken the coulis and when the cheesecake filling had set, top with the thickened coulis and set again.  It is delicious!  

Tip

I waited overnight for it to set properly. After 3hrs in the fridge it is very light and fluffy texture, almost mousse like and absolutely delightful, but not very 'set'.  If not waiting overnight it probable needs about 5 hours to set properly, but overnight would be preferred.

    nice cheesecake, I used 80gm caster sugar and found this was still too sweet for my liking. Will make again but with 50gm of sugar next time. otherwise I followed the recipe as instucted above and everyone liked the cheesecake.

    Amazing!! everyone loved it and said it was the best cheesecake theyve ever tasted, didnt put as many strawberries in and the flavour was beautiful and subtle, lovely recipe, thank you!!

    This is beautiful! Changed the base to buttersnap, left the strawberries out of the filling (used as garnish instead) and slightly reduced the sugar. such a beautifully, subtle flavoured cheesecake which set better than I could have imagined. A definite keeper!

    Yum YUm YUM .... I used frozen Blueberrues and White Chocolate with Coconut for the topping . Altered the base a little too as I did not have enough Gingenut biscuits left.  tmrc_emoticons.)

    Made this on Saturday to take to a friends house. Changed the base to butternut snap and a strawberry jelly topping.

    Huge hit.
