Ingredients

Purini Mamaoa - Steamed Pudding

  • 125 g Butter, room temperature
  • 60 g sugar
  • 2 eggs
  • 150 g plain flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 65 g plain yoghurt
  • 180 g golden syrup, 2 seperate measures of 90g
  • 1000 g water

Recipe's preparation

    Directions
  1. set 30s, temp 0, speed 4 to cream butter and sugar
  2. scrape down sides of bowl
  3. set 1min, temp 0, speed 4 whilst putting eggs in a bowl one at a time, making sure egg is mixed before next adding next egg
  4. add 150g plain flour
  5. add baking powder
  6. add baking soda
  7. add yoghurt
  8. add 90g golden syrup
  9. set 15 seconds, 0 temp, speed 4 to mix
  10. lightly grease a 4 cup capacity pudding bowl (size enough to fit in varoma dish
  11. add 90g golden syrup to prepared pudding bowl
  12. Spoon batter on top
  13. clean out mixing bowl
  14. pour 1000g into mixing bowl and put mixing bowl lid on top
  15. cover pudding bowl with greased foil, place in varoma and place varoma on top of mixing bowl
  16. set 100 mins, temp varoma, speed 2

Tip

Serve hot with custard

To make smaller puddings, use the silicon dariole molds in your varoma, spoon in 2 tsp of golden syrup all molds and cook on varoma for 20 minutes
