Ingredients

Sweet short crust pastry

  • 1/2 portion Sweet short crust pastry

Quince

  • 2-3 Quinces, peeled, cored and chopped
  • 750 grams water
  • 100 grams sugar
  • 70 grams honey
  • 1 vanilla pod, split
  • 1 Star anise, whole

Tart Filling

  • 2 egg yolks
  • 50 grams caster sugar
  • 1 teaspoon Corn Flour
  • 1/4 teaspoon Vanilla Paste/Extract
  • 1/4 teaspoon Cardamom ground
  • 75 grams cream

Recipe's preparation

    Pastry
  1. Prepare sweet short crust pastry as per Basic Cook Book.

    Only 1/2 recipe required for this recipe. 

  2. Quince
  3. Start by placing all ingredients other than quince into the bowl. Place on reverse mix at 100 degrees for 25min. In the meantime prepare the quince by peeling, coring and slicing into wedges. Then add to bowl. once time is complete, cook for a further 10-15min on 120 degrees.

    Once cooked, strain the quince. 

  4. Filling
  5. Cream egg yolks and sugar using the butterfly on speed 4 for 20 seconds. Add remaining ingredients and beat on speed 4 for 15 seconds, butterfly still in place. 

  6. Roll pastry out thinly and place into tart cases.  Chill in fridge for 10 minutes. Then place strained quince in the bottom of each tart shell. Cover with filling and place into over at 180 degrees for 30-35 minutes. 

  7. Enjoy!

Tip

Makes 6 tarts.

Serve with yoghurt or cream.

 

This recipe will provide left over poached quince.  Perhaps you could try it in a sorbet?

Take care cutting and coring quince as it is hard. The melon scoop in the kitchen toolkit works well if you are lucky enough to have one.
