Ingredients

Base

  • 150 g raw almonds
  • 65 g raw cashews
  • 100 g medjool dates, (or 6 dates)
  • 1 tsp Vanilla Bean Paste

Caramel

  • 120 g tahini
  • 130-150 g honey, (depending on taste)
  • 50 g coconut oil
  • 1 tsp Vanilla Bean Paste
  • 1 pinch himalayan sea salt

Chocolate

  • 3 tbsp cacao powder
  • 3-4 tbsp Maple syrup
  • 100 g coconut oil, (or 1/2 cup)

Recipe's preparation

  1. Base

    Place all ingredients in the bowl and set on closed lid position. Blitz on turbo until it resembles a crumb mixture. Mixture needs to be sticky and hold together well. If not, add another date and repeat the process. Press the mixture into a tin lined with baking paper.

     

    Caramel

    Place all ingredients in a clean mixing bowl and mix on speed 4 for 10 seconds. Scrape down the sides and repeat if necessary. Pour the mixture over the base and place in the freezer.

     

    Chocolate

    There are 2 ways you can do this. Firstly place all ingredients in a clean mixing bowl and mix together on speed 4 for 10 seconds. Or if you're like me and can't be bothered washing the bowl again just put all the ingredients into a small to medium sized bowl and mix together well with a spoon. Once mixed together poor the chocolate over the caramel layer and return to the freezer. 

     

    Once set cut into slices and enjoy! I put these in a container and leave in the fridge or freezer. It starts to melt and becomes quite messy if you don't!

    This recipe is amazing! I didn't have enough almonds so used wlnut and more cashews. Only mix your caramel once, mine split when I mixed it then second time! Apart from that, highly recommended!
