Base
- 80 g medjool dates or dried dates
- 200 g almonds
- 1 tsp vanilla essence
Caramel Filling
- 120 g tahini
- 80 g Maple syrup
- 50 g coconut oil
- 1 tsp vanilla essence
- pinch Himalayan salt
Chocolate Crunch Topping
- 3-4 tbsp raw cacao powder
- 1 tsp Carob Powder
- 3-4 tbsp Coconut sugar
- 100 g coconut oil

Place dates and almonds in bowl. Blitz on speed 9 for 10 seconds. Add vanilla and blend on speed 7 for 20 seconds til sticky but not paste. Press into lamington pan greased in coconut oil or prepared with baking paper.
Blend ingredients together 15 seconds speed 5. Pour over biscuit base and set in freezer for 20 minutes.
Melt coconut oil and coconut sugar 2 minutes 50 degrees speed 2. Add raw cacao powder and carob powder and blend 10 seconds speed 5. Pour topping over slice.
Place completed slice back in freezer to set again. Cut into small squares to serve.

Yummmo!! This is delicious. I only had a small amount of maple syrup so added rice malt syrup which curdled the caramel but once frozen it didn't matter, still tastes great! Very easy too

Love this recipe. So Yummy. Thankyou. I didn't have all the ingredients so substituted.
My Variation: Replaced Maple syrup with coconut syrup in the filling.
Omitted Carob powder and replaced coconut sugar with rice malt syrup in the topping.
