Ingredients

BASE

  • 260 grams dates
  • 140 grams almonds
  • 40 grams cocoa powder
  • 2 tablespoons coconut oil

CARAMEL LAYER

  • 6 tablespoons Maple syrup
  • 250 grams dates

CHOCOLATE TOP

  • 100 grams coconut oil
  • 60 grams cocoa powder
  • 70 grams honey
  • 1 teaspoon vanilla extract

Recipe's preparation

  1. BASE


    Place all ingredients into TM bowl and blend on speed 8 for 1 minute. 


    scrape bowl and blend on speed 8 for 30 seconds.


    pour mix into cake tin and place in fridge/freezer until set.

  2. CARAMEL LAYER


    Place all ingredients into TM bowl and blend on speed 9 for 1 minute.


    Scrape bowl and blend on 9 for 30 seconds. repeat until caramel consistency is acheived.


    Pour onto base and place into fridge/freezer until set.

  3. CHOCOLATE TOP


    Place all ingredients into TM bowl and blend on speed 5 for 20 seconds.


    Scrape bowl and blend on speed 5 for 10 seconds. 


    Pour onto caramel layer and place into fridge/freezer unitl set.


     

Tip

Blend the chocolate topping first and scrape into a bowl.. then blend base. you wont need to wash it in between.

    Have made this several times. I use sunflower seeds and pepitas instead of almonds and if making for true vegans, I substitute the honey for rice malt syrup. My kids love it! And bonus that it's refined sugar free

    Fantastic recipe! We are not vegan etc, but eat healthy, our kids love this too, and they don’t even like dates! A great hit with visitors also.
    You can also replace the top layer with melted chocolate with a little coconut oil in it.
    Original topping is great too

    Absolutly loved this recipe!
    I am not vegan however a co-worker is and I received so many compliments from people
    I didnt have enough cocoa powder so I reduced the base to 20g and the topping to 10g
    I also used maple syrup instead of honey for the topping and cut it by half

    Made this for a coworkers birthday who is a vegan (changed honey to maple syrup) was delicious. The base however could have used less coconut oil and unfortunately for me the top chocolate layer didn't turn out too well so I just ended up adding shredded coconut on top. Will probably make again.

    I preoaked my nuts first which means I ended up with a more pastey base by blitzing it  for the same amount of time. Next time I will just give it less time and yes I will make it again. I can't stop eating the stuff. Yum Yum.
