Ingredients
CRUMBLE MIX
- 70 grams raw sugar
- 70 grams brown sugar
- 20 grams good quality cocoa powder
PUDDING MIX
- 100 grams raw sugar
- 120 grams SR flour
- 35 grams good quality cocoa powder
- 250 grams Milk
- 2 eggs
- 75 grams Butter
- 200 grams berries of choice, either fresh or frozen
- 250 grams Boiling water

Put all raw sugar (170 Grams) into TM bowl and mill to castor sugar 6sec/spd9, set aside 100 grams of this, leaving 70 grams in the TM bowl, add the brown sugar and 20 grams of cocoa and combine for 5sec/spd5, set aside.
Melt butter in TM bowl for 60sec/70 degrees/spd2, add milk and combine for 4sec/spd4, add eggs and combine for 5sec/spd4.
Add SR flour, 100 grams castor sugar ( premilled from raw sugar) and 35 grams of cocoa powder and combine for 30sec/spd4
Distribute the berries evenly over the bottom of the 8 ramekins
Pour Pudding mix over berries, leaving at least 2 cm from top of dish
Sprinkle crumble mix over pudding mix, leaving space for pudding to rise
Carefully pour approx 30 gram boiling water over each crumble mix
Arrange ramekins onto a baking tray and bake for 20 mins, allow to cool slightly before serving
