Ingredients

Steamed golden syrup pudding

  • 1 orange, Zested
  • 45 grams golden syrup
  • 175 grams self-raising flour
  • 175 grams unsalted butter, Softened
  • 175 grams brown sugar
  • 3 eggs
  • 5 grams baking powder

Sauce

  • 1 orange zest
  • 15 grams caster sugar
  • 45 grams golden syrup
  • 20 grams orange liqueur, Optional

Recipe's preparation

    Base
  1. 1. Grease a 1.2 litre pudding basin and add half of orange zest with the golden syrup.
    2. Place all other ingredients in bowl Closed lid"Closed lid" Blend"Blend" 20 seconds spd 4.
    3. Add orange juice to achieve dropping consistency and mix another 5 secs.
    4. Spoon into basin, level the top, then cover with baking paper pleated in the middle. Secure with string and cover with foil.
    5. Place a pan with water halfway up sides. Bring to the boil, then reduce heat to low and steam, covered for 2 hours. Check water level top up when necessary. Set aside for 10 minutes.
  2. Sauce
  3. 1. Place zest and juice, sugar and golden syrup and liqueur in bowl, Closed lid"Closed lid" Blend"Blend" 3 mins 100Sous-vide"Sous-vide" , Spd 1.
    2. Turn pudding onto plate and pour over sauce.

Tip

Serve with custard, ice cream or cream.
