  • 1/2 vanilla bean pod
  • 100 grams sugar
  • 1 litre cream
  • 395 grams condensed milk
  • 60 grams glucose syrup, optional

Recipe's preparation

    Vanilla Bean Icecream
  1. Place vanilla bean & sugar into the TM bowl for 20 secs on speed 10.

    Add the cream & the butterfly, whip for around 20 secs on speed 4 or until cream is whipped (this will vary depending on how fresh your cream is) Be careful not to overwhip otherwise you will have vanilla butter!

    Add remaining ingredients & fold through for about 5 secs on speed 3. Place into a thermoserver & freeze overnight.

Tip

You may also like to add 1 or 2 egg whites to fluff it up even more.

The glucose is to stop the icecream from going too icey & gives it a lovely texture but it is still just as tastey without it.

 

You can make Cyndi's vanilla bean paste first & then make the icecream with out cleaning the bowl you won't have to do the vanilla step.

    YUMMY, love this vanilla icecream. Made at lunch and tested that eveing before it was fully set. Didn't use the glucose so hopefully we'll eat it all before it has the chance to get icy.

    Oh yum...hubby says best ice cream ever!  I made this today without my butterfly as i blitzed it last week making this......ooops...anyway i just whipped the cream on sp 5 and watched it carefully then added rest of ingredients and blitzed again sp 5.  It was so light fluffy this time.  I even made a chocolate batch with 3heaped tblsp raw cacao and tin of chocolate condensed milk.  Tasted great straight from the bowl!   Oh i don't add any sugar as i found condensed milk makes it sweet enough.

    Texture and taste are amazing but it is super sweet. I will be mixing crushed blueberries or raspberries before serving. Next time I will make without adding in any of the sugar and see how that goes! I'll post an update after I try it.
