- 500 g organic puffed rice
- 500 g Shredded coconut
- 75 g Copha
- 400 g white chocolate chips or buttons

Line tin with baking paper.
Combine puffed rice and shredded coconut in ordinary mixing bowl.
Chop up copha and place in TM bowl for 10 seconds on speed 7. Cook copha for 6 minutes at 60 degrees on speed 4.
Add white chocolate and combine with copha for 6 mins at 37 degrees on speed 1-2 until completely melted and combined.
Add to puffed rice and coconut mixture and mix gently with Thermomix spatula until thoroughly combined.
Transfer to the tin lined with baking paper and press down mixture firmly. Cover with more baking paper and refrigerate for 1 hour.
Turn out onto a cutting board and cut into squares. Garnish with Craisins or red currents.
