Recipe's preparation

  1. Place roasted ground wattleseeds and water into Thermomix bowl and cook 5 mins/100oC/speed 2. Pour mixture through a fine sieve reserving liquid, and allow to cool.

  2. Add sugar, eggs, milk, cream and 2-2.5tbs of wattleseed liquid to bowl and cook 8 mins/90oC/speed 2. Pour mixture into a shallow freezer container, or covered ice cube tray and allow to cool. Place into freezer overnight.

  3. Place Thermomix bowl into refrigerator to cool for at least 10 minutes. Remove frozen mixture from freezer and cut into ice cube sized blocks (if not already this size), and place half into Thermomix bowl. Crush 15 sec / speed 7, scrap down sides of bowl, then mix 10 secs / speed 4. Transfer to another container and repeat with remaining half.

  4. Serve immediately, or refreeze to enjoy later. For a truly Australian flavoured indulgence, blend Rozella OR Lillipilli jam (dependig on your taste preference) in the Thermomix 3 sec/speed4 (add a little water to thin if necessary) and pour over ice cream. Sprinkle with crushed macadamia nuts.

Tip

The closest flavour I can describe roasted wattleseed to, is coffee - though not as bitter. I'm not a coffee drinker, but my children and I love this flavour. Delicious!

Remaining wattleseeds may be kept and used in baking [ie biscuits], but flavour may be less intense.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
