Ingredients
- 500 grams white chocolate melts
- 395 gram tin of condensed milk
- 2 limes, zest only, no white pith
- 150 grams macadamia nuts

I'm cooking this todayRecipe's preparation
Line a 20cm tin with baking paper and set aside.
Put chocolate in bowl and grate 10 sec/speed 9. Set aside.
Peel limes and using skin only grate for 15 secs/speed 9 or until a fine zest is achieved.
weigh 150 grams macadamias into bowl then set aside with zest to add later.
Wash and dry bowl.
Add condensed milk and cook 80 degrees/ 5mins/ speed 2.
Add reserved chocolate to bowl and mix 1min & 30sec/ speed 2.
Work quickly and add lime zest and macadamia nuts. (You may also need to scrape chocolate down from sides) Mix 30 sec/ speed 2 "Counter-clockwise operation" .
Work quickly and pour into prepared tin. Bang tin on counter a couple of time to remove air bubbles.
Refridgerate for minimum 3 hours before cutting into pieces.

Can I ask what changes were made to the recipe in May last year, I know it was most likely thermomix asking to make changes but just want to make the decision for myself if I want to change it. (Thinking it might be why it hasn’t set, as other fudge recipes I have read that’s the reason ) thanks 🙂

Didn't set for me either. My gut said 5 minutes cooking time wasn't long enough, but followed the recipe to the letter anyway. Very disappointing. Have to get creative now to come up with a dessert recipe that incorporates nutty, limey, fudgey goo.
this didnt seem to set properly for me. I've never had a problem with fudge before. I'm not sure why. Great flavour though!

This was A-MAZING!!! The recipe was faultless. I even added cashews because i didnt have enough macadamias.
I've never been a hug fan of fudge but i love white chocolate which made this really nice. It was too sweet nor have too much of a lime it was very well balanced. I did swap out the macadamias for almonds which i don't think made a difference.
