Ingredients

- 200 grams raw organic sugar
- 1/2 teaspoon citric acid
- 1/2 teaspoon tartaric acid
- 1/4 teaspoon baking powder
cupcake puddings
- 160 grams raw sugar
- 130 grams cubed butter
- 1 teaspoon Vanilla Bean Paste
- 2 eggs
- 2 heaped tablespoons cocoa powder
- 230 grams SR flour
- 130 grams Milk

Mill sugar for 10 seconds speed 10
add in remaining ingredients and mix for 6 seconds speed 6
voila... its done!
pour into individiual bags with a spoon straw ( both purchased from $2 shop) and tie with a festive ribbon.
i trimmed down both the bags and the straws so they werent so big!
preheat oven to 180 fan forced and arrange cupcake cases on a tray
mill sugar and cocoa for 5 seconds speed 9. insert butterfly then add in softened butter and cream for 2 minutes on speed 4. during last 40 seconds of creaming add in add in vanilla and eggs, one at a time, through measuring cup hole.
remove butterfly and add in 1/2 of the flour and milk, mixing for 10 -12 seconds on speed 6, scraping sides if necessary. add remaining flour and milk and mix again for 10 -12 seconds speed 6, scraping if necessary.
1/2 fill cupcake moulds with mixture and sprinkle some dark chocolate chips on top to resemble the sultanas and bake for 15 minutes untill skewer comes out clean.
cool before topping with melted white choc ( i used 1/2 block of white choc, in a ziplock bag, melted in microwave for 40 seconds, allowed to cool so it thickened up ( or it will be too runny), snipped off the corner and piped onto cupcakes) add then 1 spearmint leaf cut in half and a red jaffa for each one.

These look great! I am going to make them today. I never even thought about making Sherbert before but I am looking forward to it as it was a favourite treat as a child!
