  • 1 tablespoon honey
  • 100 grams almonds
  • 1/4 teaspoon ground cardamon
  • Shredded coconut to coat

Recipe's preparation

  1. Pulverise orange peel for 10 sec on speed 9.

    2. Scrape down sides of bowl and add dates & almonds. Chop for 5 seconds on speed 7.

    3. Add honey and cardamom and mix for 20 seconds on speed 5.

    4. Lightly wet hands, roll mixture in balls about 1 tbsp in size.

    5. Roll balls in coconut and store in airtight container in fridge.

    I made small batch using 50 g of dates, 50 g of uncrystallised (naked) ginger,30 g of almonds, 3 or4 strips of orange rind , a pinch of cardamom. ( no honey).  Delicious.  I'm happily working my way through all those ageing packets of dried fruit in my pantry, experimenting with different combinations.  I especially love the use of cardamom and orange zest.  Have also tried adding a surprise centre by moulding the ball around a small cube of ginger or half an almond.  The possibilities are endless!

    These are so easy and so yummy. Not everyone is into cardamon ... but I am! and i these are the easist and yummiest things when looking for a gluten-free or 'healthy' snack.
