Ingredients

Sauce/Paste

  • 2.5cm piece ginger, fresh root, peeled
  • 1 clove garlic
  • 1 red chilli, deseeded
  • 1 spring onion / shallot, cut into 2 cm lengths
  • 1 tablespoon fish sauce
  • 1 tablespoon tamari or soy sauce
  • 1 lemon or lime juice
  • 1/2 teaspoon raw sugar

Fish and Rice

  • 800 grams Whole Snapper, Cleaned and scaled
  • 800 grams water
  • 400 grams Jasmine rice
  • small bunch coriander leaves, For garnish

Recipe's preparation

    Method
  1. Place all spice sauce/paste ingredients into TM Bowl and chop for 10 seconds on speed 7. Do not rinse bowl.

  2. Coat fish inside and out with spice paste/sauce and place on Varoma tray on top of baking paper ensuring steam has room to get through.

  3. Add water to the bowl. Place washed and weighed rice into the basket and place it in the TM bowl with the remnants of the spice paste/sauce.

  4. Place Varoma on top of TM bowl then cook for 14 minutes at Varoma temperature on speed 4.


    Remove rice and place in ThermoServer.

  5. Cook fish for a further 10 minutes  at Varoma temperature on speed 1 or until fish is just cooked.

  6. Remove fish from Varoma and place onto a serving dish garnished with coriander and serve accompanied with the rice in a separate bowl.

    really simple but flavoursome dish- my first steamed fish since i got my Thermomix! Used chinese wombok leaves instead of baking paper, steamed some vegetables and added a splash of sesame oil to the fish- thumbs up from the family tmrc_emoticons.)

    thanks very much - very simple and simply fabulous.

    after 20 minutes varoma removed fish-cleaned no head 580gms- to thermoserver and sprinkled with a little sessame oil - made just a slight change but it was very popular with the family.

    will cook this again - i am 75 and wanting to improve my health

    So glad you like it! You can also do the same recipe for rockling fillets and cook it for the same time as the rice! tmrc_emoticons.)

    This recipe is awesome.  Thanks so much  tmrc_emoticons.)  Have made it about 3 times now, without chilli so the kids can eat it and it is delicious.
