Ingredients

Ceviche with avocado mousse

  • 750 grams fish fillet, Fresh white flesh fish is best
  • 1 --- lemon, Juice only
  • 2 --- Limes, Juice only
  • 1/4 --- cucumber, Finely chopped and seeds out
  • 1 --- red chilli, Finely chopped
  • 1/2 punnet --- cherry tomatoes, Finely chopped
  • 1 tsp Black Sesame Seeds, For decoration

Avocado Mousse

  • 1 --- lime, Juice only
  • 3 --- Avocados, Flesh only
  • 1 --- fresh coriander, Handful or amount to taste (optional)
  • 1 clove garlic
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 dashes tobasco sauce, optional

Coconut Sauce

  • 1/2 cans coconut cream
  • 3 dashes fish sauce
  • 1 tsp raw or brown sugar
  • 2 sprigs coriander, Can use more to taste - stalks are fine
  • 4 cm Peeled ginger
  • 2 --- Kaffir lime leaves, Take the stalk out
  • 2 tsp sesame oil
  • 1 --- lime, Juice
  • 1 --- red chilli, deseeded

Recipe's preparation

    Ceviche
  1. Chop fresh fish fillets in to glass bowl. You can choose how big or small according to your preference.
  2. Add juice of limes and lemons - stir, cover and leave in fridge for 1 hour.
  3. Drain juice from fish.
  4. Add the finely chopped chilli, tomatoes and cucumber together with 1/2 of the Coconut Sauce. Stir. Taste - add S&P if desired. Add more Coconut Sauce if required/desired.
  5. Serve immediately and top with black sesame.
  6. Avocado Mousse
  7. Put all ingredients in to bowl of Thermomix and insert measuring cup. Speed 6 for 6 seconds. Set aside until ready to plate.
  8. Coconut Sauce
  9. Put all ingredients into bowl of Thermomix and insert measuring cup. Speed 9 for 20 seconds. Check that ingredients have all been blitzed to form a smooth sauce - repeat step if necessary with a scrape down of bowl inbetween.

Tip

Serve by itself or you can serve with corn chips to make it a snack or appetizer.
